Sweet Potatoes with Meringue Topping

Mashed Sweet Potatoes

  • 2 pounds sweet potatoes
  • 6 tbsp unsalted butter, room temperature
  • ¼ cup maple syrup
  • ¾ tsp ground ginger
  • ½ tsp ground cinnamon
  • ¼ ground nutmeg
  • ½ tsp salt
  • ¼ tsp pepper or to taste


  • 3 egg whites, room temperature
  • ⅛ tsp cream of tartar
  • ⅛ tsp salt
  • ¾ cups sugar



Step 1

Preheat the oven to 350 degrees. Prick each potato all over with a fork. Bake until very soft and caramelized, 60-90 minutes. Let stand until they’re cool enough to handle.

Step 2

Butter a baking dish. Halve the potatoes, and then scoop out the flesh and mash or puree until desired consistency.

Step 3

Mix in butter, syrup, ginger, cinnamon, nutmeg and salt and pepper. Transfer them to a baking dish and bake until they’re warmed through again, about 10 minutes.

Step 4

Meanwhile, prepare your meringue. Beat egg whites, cream of tartar and salt on low speed until frothy, about 30 seconds. Increase the speed to high and beat until soft peaks form for about another 1 minute. Gradually begin to add sugar, the more gradually you add the better. Beat until thick glossy peaks form, about 5 minutes.

Step 5

Spoon or pipe the meringue evenly over the potatoes. The more peaks and crevices the prettier it’ll look. Toast the meringue with a small torch or under the broiler with a close eye for about 1 minute. Serve immediately.
