Makes 4 servings


  • 1/3 cup sour cream
  • 1 tablespoon mayonnaise
  • 2 teaspoons fresh lime juice
  • 1/3 cup grated cotija cheese or parmesan cheese
  • 3/4 teaspoon chili powder
  • 4 ears of corn


1. Bring a large pot of lightly salted water to a boil.

2. Combine the sour cream, mayonnaise, and lime juice in a small bowl. Combine the cotija cheese and chili powder in a separate bowl.

3. Add the corn to the pot of boiling water and cook 3 minutes or until bright yellow. Remove corn from the pot and brush each with the sour cream mixture then generously sprinkle with the cheese mixture. Serve warm or room temperature.
