Black Bean Burgers with Chipotle Mayo

Servings:

Makes 4 servings

Ingredients:

  • 2 (15-ounce) cans black beans, drained and rinsed
  • 2 tablespoons olive oil, divided
  • 1 small onion, finely chopped, about 1/2 cup
  • 1 small red bell pepper, seeded and finely chopped, about 1/2 cup
  • 1 garlic clove, minced
  • 1 large egg
  • 1/3 cup panko breadcrumbs
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 4 slices Colby/jack cheese
  • 4 brioche hamburger buns
  • 4 tablespoons chipotle mayonnaise
  • 1 cup baby arugula

Instructions:

1. Place half of the beans in a large bowl and mash with a fork, stir in the remaining beans.


2. Heat 1 tablespoon of the oil in a large nonstick skillet over medium. Add the onion and bell pepper and cook until slightly softened, 3 to 4 minutes. Add the garlic and cook 1 minute. Transfer to the bowl with the beans.


3. Add the egg, breadcrumbs, paprika, cumin, and salt to the bean mixture and mix until well combined. Form into 4 equal sized patties.


4. Heat the remaining oil in the skillet over medium heat. Add the patties and cook until nicely browned and heated through, 5 minutes per side. Top each burger with a slice of cheese, cover and pan and turn off the heat. Allow the cheese to melt, about 1 minute.


5. Meanwhile, spread the cut side of the bottom half of each bun with 1 tablespoon of mayonnaise and top with 1/4 cup of the arugula. Top with the burger and close the bun. Serve immediately.
